Ajwaini Arbi Ki Sabzi / Spicy Colocasia Root with Bishop’s Weed

The Arbi Ajwain Ki Sabzi is a delectable dish made with Colocasia root vegetable. Colocasia is a wholesome root vegetable that is packed with micronutrients that is important for our body. Arbi can be prepared in so many ways: as a snack or as a sauteed or curry dish. This arbi sabzi is cooked with ajwain (bishop’s weed, carom seeds, ajowan caraway) which gives it a unique taste that is not found in many other recipes.
Ajwain is a uniquely Indian spice that is especially good for the digestion.In case of stomach ache or indigestion, just take a tablespoon of ajwain with a pinch of salt (to cut the spice’s bitterness) and swallow with a glass of water. In the winter time, ajwain is often used to coat crushed almonds and gur (brick molasses) with butter to make a brittle that is tasty and gives a boost of warmth and energy.
Ajwain is a seed that smells almost exactly like thyme but is more aromatic, slightly bitter and pungent and stronger in taste. A small amount can dominate the flavor of a dish. Arbi is closely related to the taro root but is smaller and has an acrid taste that requires careful cooking. It can be grown in poorer soils and drier climates than the taro root.

The usual way of making arbi is to simply fry it with some basic spices but then this way of cooking it with carom seeds makes it special and oh so delicious. There are days when you are so tired that all you wish for is a simple recipe that could be prepared in minutes. This Arbi ki sabzi is one such recipe that requires the least efforts. Serve the Arbi Ajwain Ki Sookhi Sabzi along with Dal, Phulka and Salad to make a wholesome and complete meal.

Ingredients for arbi ki sabzi
300 grams Colocasia root (Arbi)
1 tablespoon Ajwain (Carom seeds)
1 teaspoon Turmeric powder (Haldi)
1 teaspoon Red Chilli powder
1 sprig Curry leaves

3 to 4 green chillies

2 to 3 dry red chillies

1 tsp cumin seeds

1/2 tsp ajwain

Directions

Peel and cut the Arbi lengthwise. Add turmeric powder andmis to coat the arbi well. Heat oil and add cumin seeds and ajwain. Fry for few seconds. Add curry leaves, dry red chillies and arbi. Cook until the arbi is soft. Add green chillies and cook for another 3 to 4 minutes.

Ajwain wali Arbi ki Sabzi is ready. Serve this arbi ki sabzi with rotis or as side dish with steamed rice.
