Dry or with a little gravy, Matar / Mutter and Kulcha make a great combination . Matar kulcha is a type of gently leavened flatbread loaded with dried white peas ( safed matar / mutter ). Kulchas originated in Northern India as a variation of naan, essentially making it a variation on Punjabi-styled naan. Traditionally kulchas are prepared plain and paired with a type of curry. One of the best Indian snacks cum breakfast options out there is Chole kulche! Matar Kulcha can be prepared very easily and could be cooked in a variety of manners. Here is the recipe of a simple matar (chole ) kulcha that you can enjoy in the comfort of your home.

Matar(Chole) Recipe:
Matar Recipe Ingredients
Matar/Chole – 1 ½ Cup
Tomatoes – 3 Tablespoon
Onions – 2 medium, chopped
ginger – 1 ” piece , finely chopped or grated
Kashmiri Chili Powder – ½ Tablespoon
turmeric Powder – 1 Tsp
Black Pepper – ½ Tbsp
Roasted Cumin Seeds Powder – 1 Tablespoon
Chaat Masala – 1 Tspn
Coriander Powder – 1 Tablespoon
Dry Mango Powder – 1 Tspn
chole masala – 1 Tspn ( or garam masala )
dry ginger powder – ½ Tsp
Salt to taste Black Salt – ½ Tablespoon
Tamarind pulp – abt the size of a lime (soak in water and extract the juice ) Green Coriander Leaves – 1/4 cup
Matar Kulcha Recipe Preparation
Soak the Matar overnight. At least for 6-8 hours.Boil them in the pressure cooker for 5-6 whistles, so that they get tender. In a pan over medium flame, heat 3-4 tbsp oil. Add cumin seeds and onions. Saute until the onions are light brown. Add ginger and keep sauteing until the raw smell is gone.Add chopped tomatoes, red chilli powder, turmeric powder , black pepper, roasted cumin seeds powder, chaat masala, coriander powder, chole masala, amchur , salt, and black salt, give them a nice mix. Also add the tamarind juice.Mix them well.Add boiled Matar. Mix nicely and allow matar to simmer over low heat for 10 – 15 minutes to absorb the flavor of spices. . Garnish it with green coriander leaves.

Kulcha Recipe
Kulcha Recipe Ingredients
2 and ½ cups maida or all purpose flour
4 tbsp yogurt or (3 tbsp yogurt + 1 tbsp milk)
1 tsp baking powder ½ tsp
baking soda approx ¾ cup water for kneading – add more if required
1tbsp sugar
¾ tsp salt or as required
3- 4 tbsp oil or ghee some oil or ghee or butter for cooking
extra flour for dusting
Kulcha Recipe Preparation
Take maida in a bowl; add curd, baking powder, and baking soda.Add salt and sugar. Mix them well. Adding water (little at a time)Prepare soft , slightly sticky dough. Add oil and keep kneading until the oil is completely incorporated and the dough is smooth and no longer sticky(about 8-10 min ) . Rub some oil over the dough and keep it aside for 2 hours . After 2 hrs knead the leavened dough again for 4-5 min. Make small balls of the dough and gently roll it using a rolling pin. Put some kasoori methi or coriander leaves on it and roll with the soft hands. Place a pan on the stove, and put the kulcha on the medium-hot pan. While placing on the pan, sprinkle some water on the pan.Cover the pan and let it cook for 2-3 minutes. Keep the flame medium.Once it gets golden brown, flip the side and cook it from another side as well.
Apply butter on the kulcha and it is ready to serve.
Serve the kulcha with the Matar chole along with the lemon wedges , onions, and green chutney
