Palak / Spinach Rice

Ingredients
cooked rice – 3 and 1/2 cups
chopped spinach – about 3 cups
cashewnuts – 10 – 15
ginger- garlic paste – 1 tsp
turmeric powder – 1 tsp
coriander powder – 1 tbsp
cloves – 7 to 8
green cardamom – 2 to 3
cinnamon stick – 1 inch piece
cumin seeds
Heat 2 – 3 tbsp ghee and fry cahews. drain and reserve for later. In the same pan Add all the whole dry spices, onions and ginger- garlic paste and saute till onions turn light brown. Add tomatoes and mixed veggies and cook till they are soft. Add spinach and cook till spinach is wilted. Add cooked rice And cook for 5 minutes. Palak Rice is ready.
