Vegetable Stewed Rice

Ingredients
carrots – 1 whole , diced
broccoli florets – 1/2 cup
spring onions – 5 to 6
bokchoy – 1
garlic – 4 to 5, chopped
shallots – 1 to 2, chopped
mushrooms – 4 to 5, sliced
staranise – 1
cloves – 3 to 4
veg stock water – 3 cups

Cook the rice and keep it aside. Into a pan add about 1-2 tbsp oil and add staranise, cloves, garlic, shallot and
spring onion bulb. Saute for 2 -3 minutes. Add all the vegetables except the bokchoy leaves and spring onion greens, and mushrooms. Saute for about a minute and add 3 cups of veg staock water. Cover and cook for 4 -5 minutes. Then add cornstarch slurry, bokchoy leaves and sping onion leaves and simmer for 1 – 2 minutes. Vegetable stew is ready. Serve it over the rice.
