Dum Aloo Masala is an Indian curry made with baby potatoes in a rich creamy tomato base gravy. Dum Aloo preparation varies from region to region in India… this is a very simple and tasty version of this comfort food…
Ingredients
baby potatoes – 500 gms
onions – 1 large , finely chopped
tomatoes – 3, pureed
turmeric powder – 2 tsp
red chilli powder – 2 tsp
coriander powder – 1 tbsp
cumin powder – 1/2 tsp
dry fenugreek leaves – tbsp
cream – 1/2 cup
cumin seeds – 1 tsp
green cardamom – 2 to 3
cloves – 4 to 5
bay leaves – 2 to 3
Boil the potatoes till they are just knife tender. Shallow fry them with 1 tsp turmeric powder, 1 tsp red chilli powder and salt till crispy.
For the gravy – heat about 3 to 4 tbsp of oil in a pan and add in all the whole spices and onion and saute till the onions are light brown. Next add the tomatoes puree and all the spice powders and saute till for 8 to 10 minutes. Next add the potatoes and cream and fenugreek leaves and simmer for
4 to 5 minutes.
Dum Aloo Masala Curry is ready to be served !!!
This Dum Aloo curry is perfect with some rotis or kulchas (local Indian bread) or Naans.
