Dilkhush/ dilpasand/ dilkush/ coconut bun , a popular South Indian bakery item , is perfect for a delicious tea time delight and is also an amazing kids recipe. Try it out for your special guests and evening tea parties.
Ingredients
All-purpose flour or Cake/pastry flour- 2 1/2 cups
Warm milk- ½ cup
Sugar- 2 tbsp
Active dry yeast- 2 ½ tbsp
Butter – 1 tbsp
Salt- ¼ tsp
For the Filling :
Coconut grated- 1/2 cup
Tutti – fruitty – 1/2 cup (optional )
Raisins- ⅓ cup ( optional)
Cashew nuts, small pieces- 2 tbsp ( optional )
Cherries chopped, glazed ones- 1/4 cup (optional)
Ground cardamom- 1 tbsp
Powdered Sugar- 1/4 cup
Directions
Take the warm milk in a bowl, add yeast and sugar in it, let it stand for 15 minutes.
Take the flour in another bowl, add salt and the yeast mixture and butter , mix well with your hand. Knead well for 5 – 6 minutes till you get a soft and smooth dough. Keep it aside for at least 1 hr in a warm place for the dough to double its volume.
In a bowl, combine all the ingredients in “For filling” and keep it aside.
The Dough is ready after an hour. Punch down the air and knead again. Make 2 equal sized ball out of it.
On a clean surface, roll out the dough balls into round shape about 1/4 inch thick.
Spread the prepared filling evenly over the dough, leave the edges. Cover this with the rolled second dough ball. Seal the edges with water . If you don’t seal the edges tightly it will open up while baking.
Cover the pastry and let it sit for 15 minutes. Using a pastry brush, apply the milk or butter generously over top of the pastry.Transfer it to the baking sheet and Bake it for 30 minutes in a preheated oven at 180 deg Celsius , till the top become golden brown in color.
Let it cool down on a wire rack for 15 minutes.
Dilkush / Dilapasad / Dilkhash is ready . Cut it into a triangle slice and serve it.
