Palada payasam is one of most popular payasams ( kheer ) made in Kerala during Onam, Vishu and other special occasions . Ada or rice pasta is simmered in milk and infused with cardamom.
Ingredients
Ada ( rice pasta) – 200 gms
milk – 3 cups
evaporated milk – 12 oz can
sugar – 1/2 cup ( adjust as per taste )
cardamom powder – 1 tbsp
ghee – 3 to 4 tbsp
cashew-nuts – 10 to 15
raisins – 10 to 15
Directions :
Pressure cook the milk, evaporated milk,sugar, 1 tsp ghee and cardamom powder for 15 to 20 minutes on low heat.
Cook the ada in 5 to cups of water for 10 to 15 minutes or as per the package instructions. Once the ada is cooked drain.
Add the milk and evaporated milk mix to the cooked ada and simmer for another 10 to 15 minutes. Palada payasam is ready .
Fry the cashew nuts and raisins for 2 to 3 minutes and add them to the Palada payasam. Adding the dry fruits is optional
