Raw banana – 2 peeled and diced
elephant foot yam – 250 gms
yogurt – 3/4 cup
grated coconut – 3/4 cup
cumin seeds – 1/2 tsp
turmeric powder – 1 tsp
green chillies = 3 to 4
pepper powder – 1 tsp
fenugreek powder – 1/4 tsp
mustard seeds – 1 tsp
fenugreek seeds – 1/4 tsp
curry leaves – 12 to 15
Grind together coconut and cumin seeds to a fine paste. Cook the bananas and yam in about 2 cups of water along with turmeric powder, pepper powder and green chillies. Once the vegetables are cooked add the coconut paste, fenugreek powder and salt and simmer for 2 – 3 minutes. Add the yogurt, mix well and simmer for 1 to 2 minutes.
Heat 2 tbsp oil. Add mustard seeds, fenugreek seeds and curry leaves . When the mustard seeds start popping , add this to the vegetable
Kaalan or Kerala style Banana and Yam curry is ready.
