Quinoa Pulao
Quinoa is a complete source of protein and a great source of omega- 3 fatty acids. Here is an exciting way to add quinoa to your daily diet.
Ingredients
Quinoa – 1 cup
onions – 1/2 cup
ginger , chopped- 1 tspn
garlic, chopped – 1 tspn
tomatoes, chopped – 1 medium
mixed vegetables – 1 cup
green chillies – 2 ( optional)
cinnamon – 1 inch piece
green cardamom – 2
cloves – 4
staranise – 1
cumin seeds – 1 tspn
stock water – 1 + 3/4 cups
Heat oil in a pan. Add the whole spices and onions and saute till onions are light brown. Add ginger-garlic, tomatoes, green chillies and salt and cook till tomatoes are soft. Add mixed vegetables and stock water and bring it to boil. Add quinoa and cook for for 10-15 min till the quinoa is cooked. Add cilantro at the end.
