Ingredients:

Jackfruit seeds – 2 cups, remove the thick shell, and dice the jackfruit seeds green mango – 1 , peel and slice into chunks

Moringa Drumsticks – 1 to 2 , cut into 3 ” pieces

cumin seeds – 1/4 tsp

pearl onion – 1

grated coconut – 1 cup

turmeric powder – 1/4 tsp

red chilly powder – 1/2 tsp

mustard seeds – 1tsp

dry red chillies – 3 to 4

curry leaves – a handfull

coconut oil – 2 tbspn

Pressure cook the jackfruit seeds and mango along with about a cup of water for 2 to 3 whistles.

Grind the coconut cumin seeds and pearl onion with little water into a thick fine paste.

In a kadai or wok cook the drumsticks with about a cup water till soft. Add the cooked jackfruit seed- green mango, coconut paste , turmeric powder and red chilly powder, and simmer for 4 to 5 minutes. In a separate pan, add coconut oil and mustard seeds. When the mustard seeds start to crackle ad the dry red chillies, onion and curry leaves and saute till onions turn light brown. Add this tempering mix to the curry. mix well and simmer for 3 to 4 minutes.

Jackfruit seed curry / ചക്കക്കുരു കറി is ready.
