Kaaju Makhana Curry

Ingredients
makhanas ( puffed lotus seeds ) – 2 cup
cashew nuts – 3/4 cup
onion – 1 medium. roughly chopped
tomatoes – 2 medium, roughly chopped
garlic pods – 4 to 5
ginger – 1 inch piece, diced
turmeric powder- 1 tsp
red chilli powder – 1 tsp
coriander powder – 1 tbsp
garammasala – 1/2 tsp
kasoori methi – 1 tbsp
green cardamom – 2 to 3
black cardamom – 1
bay leaf – 1
cumin seeds – 1 tsp
Dry roast the makhanas until they are crispy. Heat about 2 to 3 tblsp oil or ghee and fry the 1/2 cup cashews until golden brown and drain and set aside. In the same pan add all the whole spices, onions and saute till onions are translucent, and set aside. Next saute the tomatoes, garlic and ginger till the tomatoes are soft. Add the tomatoes and onion mix to a grinder and grind to fine paste.
Next heat about a tbsp of oil or ghee and cumin seeds, bay leaf , tomato- onion paste and all the spice powder except garam masala, and cook for 10 -12 minutes on medium heat. Keep stirring frequently. Next add the makhanas and fried cashews and cook till the makhanas are soft. Once the mahanas are soft add the garam masala , crushed kasoori methi and salt , and simmer simmer for another 2 -3 minutes.. Kaju Makhana Curry is ready !!!
